With leftover sour cherries and half a jar of peanut butter sitting in the pantry, a creative intervention is necessary. These Sour Cherry Peanut Blondies are one of my best improvised recipes. Adding peanut oil to the batter is genius. The result is one dense, nutty blondie. Also, leave the peanuts whole instead of chopping them. Consequently, each bite is a flavor bomb.

Sour Cherry Peanut Blondies with Peanut Butter Frosting

Ingredients
For the Blondies:
- 2 cups flour
- 1 teaspoon baking powder
- 1 cup firmly packed light brown sugar
- 1 stick 1/2 cup butter, melted
- 1 large egg
- 1 teaspoon vanilla
- 3 tablespoons peanut oil
- 1 cup sour cherries pitted
- 1 cup salted peanuts
For the peanut butter frosting:
- 3/4 cup peanut butter
- 3/4 cup peanut butter chips
Instructions
Make the Blondies:

Preheat oven to 350 degrees F

Grease an 8"x8" square pan.

In a separate bowl, whisk the flour and baking powder together. Set aside.

Melt the butter, transfer to the bowl of a mixer beat in the sugar.

Add egg and combine.

Beat in vanilla and oil.

Add the dry ingredients in three parts, incorporating each part thoroughly.

Stop the mixer when ingredients are just combined.

Fold in the sour cherries and peanuts.

Scrape batter into the pan.

Bake for 30 minutes or until a knife inserted in the center comes out dry.

Remove from oven and frost immediately.
Make the Frosting:

Melt peanut butter and chips together in the microwave or a pan until smooth.
