Peanut Spice Sticks with Orange Glaze
One day last week I was on my way out the door to the farmers market when I turned around still with my empty bags in hand and headed straight for my pile of German cooking magazines. Over Christmas when we were back visiting our home and family I had picked up a slew of them.
There is nothing about these cookies that particularly screams “Christmas” but I was intrigued by the flavors and saved it to try later. For some reason, I thought of it out of the blue and sat down with the pile of magazines on my lap and flipped through them until I found it and set it aside to try out.
Finally running down the stairs and making strides to Union Square, I ran smack into someone who made me an offer I could not refuse. More about that at another time. So if it hadn’t been for this recipe I probably would not have had this new opportunity come my way. Funny how life works sometimes.
The dough is kneaded together by hand and it comes together quickly. The cookie sticks themselves are supposed to be twisted. They definitely look prettier that way in the magazine but I found the dough crumbled when I tried to turn them. Next time I will roll the dough thinner and chop the nuts more finely to try and remedy that.

Orange Glazed Peanut Spice Sticks

Ingredients

  • 2+1/3 cups flour
  • 1 Scant half cup white granulated sugar
  • 1 pinch salt
  • 1/2 teaspoon ground cardamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • 1 scant cup butter softened
  • 1 egg yolk
  • 1+1/2 cups unsalted peanuts chopped into small pieces
  • 1/3 cup brown sugar
  • 3 tablespoons peanut butter
  • 2 cups powdered sugar
  • 2-3 tablespoons orange juice

Instructions

  1. Whisk together flour, sugar, salt and spices.

  2. Add butter and egg yolk to the dry ingredients and knead until a smooth dough forms.

  3. Wrap the dough in plastic and refrigerate one hour.

  4. Preheat oven to 350 degrees F.

  5. Line 2 baking sheets with baking paper.

  6. Melt the brown sugar in a pan and toss 1 cup of the peanuts in the sugar. Add a little water to the pan if necessary and set aside.

  7. Remove the dough from the fridge and divide it in half.

  8. Roll out each half of the dough into equal rectangles.

  9. Spread the peanut butter over one of the rectangles.

  10. Sprinkled the brown sugar peanuts over the peanut butter and lay the other dough rectangle on top.

  11. Cut the dough into strips from the shorter end.

  12. Bake for 10-12 minutes.

  13. Remove from oven, transfer to wire racks, and let cool completely.

  14. Mix the powdered sugar and the orange juice together until smooth.

  15. Drizzle over the peanut sticks and sprinkle with the rest of the chopped peanuts.

  16. Let the glaze harden before serving.

These are amazing. Sweet, spicy, and flavorful with almost a shortbread-like consistency. Don’t let the nutmeg, cinnamon, and clove combo deter you from waiting until December to try them out. The spices don’t make them taste “Christmassy” but rather add deep flavor.

Love peanuts and love these peanut sticks! Wondering if print this recipe and tuck it away and later go to retrieve it to make them would someone approach me with an offer I can't refuse 😉 Time will tell!

I am definitely a fan of orange and spice. I'd never had cardamom until I went to college and was introduced to the chai latte. Now I have cardamom all the time! It's become a favorite.

Can't wait to hear about the offer you couldn't refuse!

Totally bookmarking these to try! Instead of the glaze, it might be fun to play with chocolate. You can't go wrong with chocolate and peanuts. And perhaps salt. 🙂

I can imagine these to have a similar appearance to cheese straws once they are twisted! They definitely shouldn't be saved just for Decemeber, they sound fabulous. I love the idea of the orange glaze, I never think about glazing cookies!
