These Halloween Coffin Linzer Cookies are one of my easiest recipes for my favorite holiday.  There is no real recipe, mostly just instructions. Honestly, I used the gingerbread dough I had in the freezer. Luckily, it was a brown color like wood for a coffin. Ok, that might be a stretch. Regardless, the recipe calls for a rollout cookie recipe. So use your favorite. I recommend a chocolate flavor for the look. If you use a vanilla cookie recipe, glitter the top layer with brown or black glitter sugar. Or you can color the dough with black paste food coloring or charcoal powder. You can shortcut this entire process by using store-bought cookie dough. I won’t judge.

The filling for these Halloween Coffin Linzer Cookies is strawberry jam. I was looking for a bloody red color, so it fits the bill. This flavor combination of gingerbread and strawberry is a revelation. I associate strawberry flavor with summer and gingerbread with fall, winter time. However, I am glad I went off script because the combination is delicious. Regardless, use any jam you like.

Let’s make the cookies!

So where are we? Oh yes. Onto these treats. Roll out the dough and use a coffin-shaped cookie cutter to create shapes. On half of them, use a small square cutter or wing it freehand to cut a square out of the top portion of half of the coffin-shaped cutouts. Leave the other half solid. Now, normally, when I make Linzer cookies, I bake the solid cookies and the ones with the cutouts on separate sheets. This is because, depending upon the size of the cutout, they have two different baking times. This is not the case with these. The size of the cutouts is small enough to have the same baking time.

I baked these Halloween Coffin Linzer Cookies at 350°F for seven minutes, but make sure you follow the instructions of your cookie recipe.  When the cookies have cooled completely, spread the jam on the solid cookie. Then top with the cutout cookie. Place two candy eyes in the cutout part, and you’re done.

Ingredients

  • Cut out cookie dough of your choice
  • 1 cup red colored jam
  • Candy eyes

Instructions

  1. Preheat the oven to 350F

  2. Line 2 baking sheets with parchment paper.

  3. Roll out the cookie dough on a lightly floured surface.

  4. Cut out coffin shapes with a cookie cutter.

  5. On half of the cookies, use a small square cutter to cut a box shape out of the top half of the cookie.

  6. Bake for 7 minutes or according to the cookie recipe's directions.

  7. Transfer to a wire rack and let cool completely.

  8. Spread the solid cookies with jam and top with the cutout cookie.

  9. Place the eyes on top of the jam in the box window.

  10. Plate and serve.
