Rutabaga Apple Paprika Spread

by Lora Wiley-Lennartz
I had a large piece of leftover rutabaga in the fridge from making another recipe. It wasn’t quite enough to make another dinner dish. So I turned it into a creamy Rutabaga Apple Paprika Spread appetizer. I used a spicy smoked paprika to amp up the flavor. The rutabaga already has a strong flavor. So the smoked paprika might be too much for some people’s palates. Feel free to substitute sweet instead. If you want a spicier version, use cayenne or chili pepper instead.

Meet the rutabaga in this Rutabaga Apple Paprika Spread:

This poor, ignored veggie is the underdog of the root vegetable world. Also, it’s possibly the only veggie that sounds like it should come with its own polka soundtrack. This humble root is a cross between cabbage and turnip. Consequently, it basically makes it the love child of coleslaw and stew.Rutabaga Apple Paprika Spread

Packed with vitamin C, fiber, and potassium, rutabaga is a nutrient powerhouse disguised as a lumpy potato wannabe. It’s great roasted, mashed, or even snuck into soups.  When your family isn’t looking, of course. For example, this Rutabaga Apple Paprika Spread, Plus, rutabaga is low in calories. This makes it the perfect vegetable for anyone trying to eat healthy without sacrificing flavor—or their sense of humor.

In short, if you want a root that boosts immunity, aids digestion, and wins awkward-vegetable-beauty-pageants, rutabaga has you covered. The apple and apple juice bring the sweetness. You can add a few pinches of sugar if you want more. Because of the strong flavor, I recommend pairing this appetizer with plain crackers or flatbread, white or multigrain, which is fine, just nothing with flavor. This is a perfect fall or winter appetizer
