Thanksgiving Leftovers Strudel is your new favorite day-after delight. Raise your hand if you’re always searching for creative ways to repurpose Thanksgiving leftovers! Sure, some things taste better after a day or two in the fridge (hello, stuffing!), but after the third plate of reheated turkey, it’s time to mix things up. Enter the Thanksgiving Leftovers Strudel—crispy, flaky, and packed with all your holiday favorites in one easy-to-make package.
Puff Pastry Saves the Day!
To make this strudel, I head straight to the freezer and haul out my trusty puff pastry sheet. (Yes, I keep these on hand at all times. They’re lifesavers.) After a quick thaw, I roll it out on a lightly floured surface, then transfer it to a parchment-lined baking sheet. Now, the fun begins! I sprinkle a layer of breadcrumbs down the center, which helps keep things from getting soggy, and start piling on the leftovers. Mashed yellow and sweet potatoes, stuffing, chopped turkey, brussels sprouts, even cranberry sauce all go right down the middle.
Here’s the best part—no need for a strict recipe. Got leftover cheese from the holiday charcuterie board? Toss it in! Still holding onto that last slice of ham? Perfect. Thanksgiving Leftovers Strudel is all about the flavors of the season in every bite.
After the filling’s in place, I fold the pastry over, seal it up, and roll it so the seam is on the bottom. A quick brush of beaten egg gives it that beautiful golden crust, and then it’s off to the oven. Bake until it’s puffy, crispy, and irresistible. Serve with a side of warm turkey gravy for dipping (because we all know gravy goes with everything).
Slice it up and enjoy! This Thanksgiving Leftovers Strudel is ideal for a snack or a cozy meal with a green salad. It’s the ultimate solution to the turkey-day food coma, now in a crispy, handheld form. Happy strudeling!
