Maybe it’s just you and your significant other at your Thanksgiving table. For all of these reasons, make this Turkey in Apple Brandy Sauce instead. Make it even if it isn’t Thanksgiving.

Orange, apples, golden raisins, thyme

This sweet-savory dish is so delicious and presents fancy when it’s so easy to throw together. Can you imagine having your main turkey dish for Thanksgiving finished in 40 minutes? That’s all it takes to throw this dish together.  I used very thinly cut turkey breast in this dish. Consequently, the dish takes a lot less time to cook.

Turkey Breast in Apple Brandy Sauce

I found this recipe in a German cooking magazine. The recipe asked specifically for Calvados.  However, I used a more pedestrian, less expensive apple brandy and it worked just fine. It was an airline-sized bottle I picked up at my local liquor store and only used half of it.

The pink peppercorns are a nice touch for both a visual and tasty pop of color and flavor. However, you can leave them out. Also, skip the thyme if you prefer. Substitute fresh rosemary instead.

If the raisins look a bit strange. It’s because I used a more exotic jumbo golden variety. I prefer them to the dark version for this Turkey in Apple Brandy Sauce recipe.

If you have leftover turkey after Thanksgiving, you can repurpose it into this dish. Use light and dark meat if you like. Instead of searing the meat, just heat it in the oil and follow the recipe as written. It will take even less time to prepare.

Ingredients

  • 1+1/2 lbs thinly sliced turkey breast cutlets
  • Kosher salt and freshly ground pepper to taste
  • 1/2 orange
  • 1 large red apple
  • 2 tablespoons olive oil
  • 1/2 cup apple juice
  • 1/4 cup raisins
  • 2 tablespoons apple brandy
  • 1 teaspoon red peppercorns
  • Fresh thyme for garnish

Instructions

  1. Rinse the turkey meat in cold water and pat dry.
  2. Season with salt and pepper and let rest for 10 minutes.
  3. Juice the orange half, Core the apple and cut into quarters. Cut each quarter into thin slices.
  4. Heat the olive oil in a large skillet. Sear the turkey breasts on both sides. If all the turkey pieces do not fit in the pot at once, sear them in batches. Add all the turkey back into the pot before the next step.

  5. Add the apple juice and raisins to the pan and simmer over a low heat for 5 minutes.

  6. Add the orange juice, apple slices, and the apple brandy to the pan.

  7. Stir to combine the apples. Cook over a low heat for another 5 minutes.
  8. Add the peppercorns to the pan. Cook for another 2 minutes.
  9. when the turkey breasts have been cooked through, remove from heat.
  10. Plate, garnish with fresh thyme and serve.
