Duck Fat Fried Potatoes

Only recently, in the last few years did I start saving fat drippings to recycle in other recipes. I don’t know what took me so long. However, I am glad I came to the fat saving party even if I am a late arrival. In the nether region of my refrigerator sits a small jar of duck fat I’ve saved for something special. This Duck Fat Fried Potatoes recipe is just the ticket.

Duck Fat Fried Potatoes

My love affair with Bratkartofflen (German Fried Potatoes) started at the same time as my love affair with Germany. It was my go-to late-night indulgence. Perfect with a glass of red wine. My German version of Disco Fries, if you will. This Duck Fat Fried Potatoes recipe hits the same spot and more.

Important to note in this recipe, make sure the speck or thick-cut bacon pieces are already cooked before adding them to the recipe. You want to bring out the smooth silky duck fat flavor. If you mix the bacon grease with the duck fat, the former will overpower the flavor of the latter.

Fried Onions

Simple & Delicious

This recipe has a few steps but it’s extremely simple to throw together. Peel, boil, cool and slice the potatoes. Then, heat up the duck fat in a large skillet and fry them until golden brown. Remove the fried onions from the pan and set aside. Next add the cooked, sliced potatoes to the pan and fry in the duck fat on both sides.

If the pan is too dry, add additional duck fat to the pan. More is more in this case. Once the potatoes are browned on one side, add the fried onions and speck, or bacon pieces to the pan and toss together for another few minutes.

Serve Duck Fat Fried Potatoes with seasoned sour cream. I flavor it simply with kosher salt and freshly ground pepper. However, add garlic or chili powder if that is your preference. A dash of fresh horseradish added to the sour cream is also delicious. Trust me, cool creamy sour cream is the perfect complement to the salty, crispy potatoes.

Ingredients

  • 2 lbs small yellow oval potatoes
  • 1/3 cup cooked speck or chopped thick-cut bacon
  • 1 onion
  • 4 tablespoons duck fat
  • Kosher salt and freshly ground black pepper
  • 1/2 cup sour cream

Instructions

  1. Rinse the potatoes, peel them and boil in salted water for 15 minutes. You should be able to run a fork through them but they should not fall apart.
  2. Drain and let them cool completely.
  3. Use a sharp knife or a mandolin to slice the potatoes into rounds.
  4. Peel the onion and slice into rings
  5. Heat the duck fat in a large skillet.
  6. Add the onions to the pan and sauté until browned, remove with a slotted spoon and set aside.

  7. Spread the potato slices out and let them cook until browned on one side, about 8 minutes.

  8. Flip them over, add the speck and the fried onion rings to the pan and cook for another 5 minutes. If the pan becomes too dry, add more duck fat to the pan, go ahead.

  9. Season with kosher salt and freshly ground black pepper to taste.
  10. Remove from heat, transfer to a serving platter.
  11. Season the sour cream with kosher salt and freshly ground black pepper and serve on the side.
