Here is a salad recipe that reminds me of Oktoberfest and all things Bavarian. Consequently, this is the translation from the original German. An Apple Daikon Radish Salad is perfect deliciousness for any Oktoberfest celebration. Furthermore, it is a crisp fresh bowl of flavor. This recipe is from Edeka’s German website. For you German speakers out there, check their site for other lovely recipes.
Jump to RecipeThe daikon radish and apples are a beautiful combination. The salad also contains strips of green bell pepper. Additionally, Raw walnut pieces bring additional crunch and flavor. Then, a tangy and sweet apple vinegarette dresses this salad. This is a mixture of walnut and vegetable oils, cider vinegar, and apple juice. The dressing is delicious. It is definitely a keeper for future fall salads.
The curly cut of the radish is, admittedly, me showing off. I have a special radish cutter I bought in Munich. Therefore, I seize any occasion to show it off. It looks so pretty in this Apple Daikon Radish Salad. A spiralizer will also do the trick. Alternately, cut the radish into coins or thin sticks.
In Bavaria, locals eat Daikon radish or Radi with beer and soft pretzels. Furthermore, Radi also decorates cheese and meat platters. I love to eat it with Obatzda and a pretzel.
The salad comes together in only a few minutes. So there is very little prep time. However, there is a rest time. Toss the salad with the apple vinegarette. Then, let it rest for 20 minutes. The result is worth it.
Also, this salad is vegetarian and vegan-friendly. However, any type of wurst in sliced turns it from a salad to a meal.
