Ingredients
- 2 lbs small yellow potatoes
- kosher salt and freshly ground pepper to taste
- 2 tablespoons fresh thyme leaves
- 1/4 cup clarified butter or ghee
- 1/3 cup chopped raw almonds
Instructions

Rinse the potatoes and boil them in salted water for 20 minutes.

Drain the potatoes. Let cool for 10 minutes, then pull off the skins.

Heat the clarified butter in a large skillet.

Add the peeled potatoes and fry until golden brown.

Add the thyme and the chopped almonds to the pan and toss to combine.
