Ingredients

  • 1 pt. mini tomatoes
  • 3 small zucchini
  • 4 large chicken breasts
  • Kosher salt & freshly ground pepper
  • 8 large garlic cloves
  • 8 sprigs of rosemary
  • 8 sprigs fresh oregano
  • 1 tablespoon vegetable oil
  • 4 slices thick-cut bacon
  • 1 cup heavy cream
  • 1 cup water
  • 8 oz cream cheese

Instructions

  1. Halve the tomatoes.
  2. Cut zucchini into slices.
  3. Rinse the chicken breasts and pat dry.
  4. Pound lightly and cut each in half.
  5. Season with salt & pepper.
  6. Roll up each chicken piece around a garlic clove.
  7. Tie one sprig each of rosemary and oregano around each with kitchen twine.
  8. Place a layer of paper towels next to the stove.
  9. Heat oil in a large pot with a lid.
  10. Fry the bacon until crispy. Remove and drain on paper towels.
  11. Fry the Chicken in the bacon fat for 3-4 minutes per side.
  12. Remove from the pot. Set aside.
  13. Fry the zucchini in the bacon fat for 2-3 minutes.
  14. Add tomatoes and fry for 1 minute more.
  15. Season with salt and pepper.
  16. Stir in heavy cream, water, and cream cheese.
  17. Bring to a boil. Season with salt and pepper.
  18. Place the chicken in the sauce and cook, covered, for 20 minutes.
  19. Chop the bacon.
  20. Transfer the chicken to a serving platter.
  21. Sprinkle the bacon over the top and serve.
