Some people cannot wait for holidays and count down the days. I have my favorites of those, no doubt. However, I also can’t wait for rhubarb season. So why do I love it so much? It’s versatile, it’s pretty, and it inspires kitchen creativity. Every year, I look forward to concocting new rhubarb recipes. This season, the first one out of the gate is Strawberry Rhubarb Lemonade. Consequently, I am thrilled with the result.

Strawberry Rhubarb Lemonade
Ingredients
- 1 cup chopped rhubarb stalks*
- 1 cup chopped fresh strawberries
- 1 cup water
- 3/4 cup sugar
- 6 lemons
- 6 cups cold water
Instructions

Toss the rhubarb, strawberries, water, and sugar together in a saucepan.

Cook until the strawberries and rhubarb break down.

Remove from heat and set aside to cool completely.

Strain the mixture and collect the strawberry rhubarb syrup in a pitcher.

Juice the lemons and add to the pitcher with the water.

Stir and serve over ice.
Recipe Notes
* Make sure you wash the rhubarb thoroughly and trim off the leaves. The leaves are poisonous.
