Some people cannot wait for holidays and count down the days. I have my favorites of those, no doubt. However, I also can’t wait for rhubarb season. So why do I love it so much? It’s versatile, it’s pretty, and it inspires kitchen creativity. Every year, I look forward to concocting new rhubarb recipes. This season, the first one out of the gate is Strawberry Rhubarb Lemonade. Consequently, I am thrilled with the result.

Let’s talk about rhubarb

So what’s the deal with rhubarb, anyway? Rhubarb is that long, pinkish-red stalk at the farmers market that looks like celery dressed up for a Barbie convention. So it’s technically a vegetable (yes, really), but we treat it like a fruit. Why? Because when you cook it down with sugar and strawberries, it becomes a tart-sweet dream that tastes like summer’s greatest hits.

Now, here’s the fun part that applies to this Strawberry Rhubarb Lemonade. Rhubarb is in season from April to June, which means it’s practically begging to be made into something fabulous. And strawberries? Well, they show up right on time, like the rom-com love interest rhubarb didn’t know it needed. Together, they’re the Beyoncé and Jay-Z of the produce world—sweet, tangy, and iconic.

Summer Drink Recipe

Strawberry Rhubarb Lemonade

Ingredients

  • 1 cup chopped rhubarb stalks*
  • 1 cup chopped fresh strawberries
  • 1 cup water
  • 3/4 cup sugar
  • 6 lemons
  • 6 cups cold water

Instructions

  1. Toss the rhubarb, strawberries, water, and sugar together in a saucepan.
  2. Cook until the strawberries and rhubarb break down.
  3. Remove from heat and set aside to cool completely.
  4. Strain the mixture and collect the strawberry rhubarb syrup in a pitcher.
  5. Juice the lemons and add to the pitcher with the water.
  6. Stir and serve over ice.

Recipe Notes

* Make sure you wash the rhubarb thoroughly and trim off the leaves. The leaves are poisonous.
