Craving a cocktail that’s not just delicious but also Instagram-worthy? Say hello to the Pink Pineapple Lemon Colada. This delightful drink mixes the unexpected charm of pink pineapples and pink lemons, creating a refreshing twist on the classic colada.
But first, what exactly is a colada? It’s a tropical cocktail, typically blending rum, coconut cream, and pineapple juice with ice. Think of it as a vacation in a glass. Now, imagine that classic taste, but less sweet, fresher, and with a playful pink hue. Intrigued? You should be.
The Specialty Food Association‘s Fancy Food Show held in June in NYC provides great inspiration. This three-day expo of food products is a treasure trove and just a whole lotta fun. Of the 2,700 vendors, one of my favorite stops this year was Melissa’s Produce. They generously gifted me with a pink pineapple and a bag of pink lemons. When life (or Melissa’s Produce) hands you lemons – make a colada!
Pink Pineapples!
Enter the Pinkglow pineapple. from Del Monte. This isn’t your ordinary yellow pineapple. Grown in sunny Costa Rica, Pinkglow pineapples boast a stunning rosy flesh. They’re juicy, a tad less acidic, and carry a subtle sweetness that dances on your taste buds. It’s like biting into a sweet, tropical sunset.
Pink Lemons!
Now, let’s talk about pink lemons. Yes, they’re real, and they’re fabulous. Pink lemons, with their striped rinds and blush-colored flesh, are a feast for the eyes and the palate. They offer a more floral and less tart flavor compared to regular lemons. Imagine a lemon that’s been kissed by a rose.
When you blend these two delightful fruits with coconut cream and simple syrup, magic happens. The result? A Pink Pineapple Lemon Colada that’s smooth, creamy, and slightly less sweet than your traditional colada. It’s fresher, more vibrant, and customizable. Want it sweeter? Add a dash more simple syrup. Prefer it more tart? Ease up on the syrup.
Serendipitously, I happened to have some pink maraschino cherries on hand. These provided the perfect garnish for this pretty pink cocktail.
So, why not impress your friends at the next summer party with this unique cocktail? It’s not just a drink; it’s a conversation starter. Plus, it looks like it’s been plucked straight from a tropical fairy tale.
Ready to sip into summer? Grab your blender, and some ice, and get ready to meet your new favorite cocktail. The Pink Pineapple Lemon Colada is here to add a splash of color and a burst of flavor to your sunny days. Cheers!
