Ingredients

  • 2 lbs carrots
  • 3 tablespoons butter
  • ½ cup orange juice
  • 2 Tablespoons honey
  • 3 tablespoons Gochujang
  • ½ cup raisins
  • Kosher salt and freshly ground pepper

Instructions

  1. Peel and trim the carrots. Cut into rounds.
  2. Heat the butter or oil in a large pot or Dutch oven.
  3. Cook, stirring for 3-5 minutes
  4. Stir in the honey, orange juice, and Gochujang.
  5. Turn the heat down to low. Cover and simmer for 10 minutes.
  6. Add the raisins.
  7. Turn the heat up to medium. Cook for another 10 minutes.
  8. Season with salt and pepper.
  9. Plate and serve.
