Pineapple Christmas Cream is my German mother-in-law’s famous dessert. Consequently, every year at Christmas, the family clamors for this and her other specialty, Gentleman’s Cognac Cream. One day, I will post that recipe as well. It’s another fantastic addition to her dessert hit parade. 

My mother-in-law always makes an extra bowl of this dessert for family members to divide up and take home. However, rarely is there a spoon left of Pineapple Christmas Cream by the time December 26th rolls around.

Pineapple Christmas Cream

My mother-in-law is now 93 years old, and her eyesight is almost gone. However,  these creamy desserts continue to march out of her kitchen. Obviously, she is no slacker in the Christmas recipe department.

We travel home to Germany every other year at Christmas time. Consequently, my mother-in-law’s desserts are extra special to my husband and me. She has a few other Christmas classic desserts up her sleeve as well. In addition to Pineapple Christmas Cream and the cognac cream, she also makes up a huge bowl of her famous potato salad.  The whole family turns into savages when her potato salad arrives on the scene. However, that’s a story for another day, or just read the post. Not surprisingly, we delight in grazing on this over the holiday week. However, if the potato salad lasts a week in the fridge without being eaten, that’s a true Christmas miracle. It is usually the first dish to disappear.

Family Recipes Are Precious

In truth, I realize how precious these recipes are to myself and my German family, so I am recording them here. Pineapple Christmas Cream is a quick and simple make-ahead holiday dessert. This delicious dessert is also light and creamy. It especially goes down easily after a heavy meal.

So, below is the recipe for Pineapple Christmas Cream. It’s simple to make. I create a pineapple gelatin then fold whipped cream into this family classic dessert. 

Pineapple Cream

Pineapple Cream (Ananas Creme)

Ingredients

  • 1 20oz can Pineapple, packed in juice.
  • 1 package vanilla pudding
  • 2 cups pineapple juice (juice from can plus water)
  • 1/3 cup white granulated sugar
  • 1 packet gelatin powder
  • 1 cup heavy cream

Instructions

  1. Drain pineapple and reserve the juice.

  2. Cut up pineapple in thumbnail sized pieces.

  3. Place the reserved pineapple juice (top it up with water if it is not exactly 2 cups of liquid) in a saucepan over medium heat.
  4. Stir in the pudding powder and the white granulated sugar and cook the mixture until both are dissolved into the liquid. Remove from heat.
  5. Pour the gelatin powder into a small bowl. Add warm water to dissolve the gelatin. Stir the dissolved gelatin evenly into the warm pudding.
  6. Mix in the pineapple pieces. Let the mixture cool completely. 

  7. Whip the heavy cream until stiff peaks form.
  8. Fold the whipped cream into the mixture.
  9. Cover tightly with plastic cling film and transfer to the refrigerator to chill before serving (at least 2 hours)
