Pistachio Basil Mascarpone Dip

Ingredients

  • 1 cup raw shelled pistachios
  • 1 cup fresh basil leaves loosely packed
  • 1/4 cup grated parmesan cheese
  • Juice and zest of 1 lemon
  • 1 garlic clove
  • 4 tablespoons extra virgin olive oil
  • 8 oz. Mascarpone
  • Kosher salt and freshly ground pepper to taste.
  • Red or pink pepper corns for garnish.

Instructions

  1. Toast the pistachios in a dry pan, then remove from the heat and let cool.
  2. Blend the pistachios, Parmesan cheese, basil, lemon zest, and garlic clove in a food processor.
  3. Blend until coarsely chopped.
  4. Slowly drizzle in the olive oil, lemon juice, and lemon zest until the mixture becomes smooth and creamy.
  5. Pulse in the mascarpone.
  6. Season with salt and pepper to taste.
  7. Transfer the dip to a serving bowl.
  8. Garnish with peppercorns and serve with crackers or breads.
