Ingredients

  • 3 lbs yellow potatoes
  • Pinch sugar
  • 3/4 cup Mayonnaise
  • 2 tablespoons white wine vinegar
  • 2 tablespoons freshly squeezed lime juice
  • 2-3 tablespoons hot mustard
  • 2 tablespoons lime zest
  • Kosher salt & freshly ground black pepper to taste
  • 1 red onion peeled & finely diced.
  • 1/4 cup chopped fresh parsley

Instructions

  1. Peel and cut potatoes into pieces.
  2. Boil in salted water with a pinch of sugar until tender.
  3. Let cool completely and place in a bowl.
  4. Whisk mayo, vinegar, juice, mustard, and zest.
  5. Season to taste with salt and pepper.
  6. Toss the dressing with the potatoes.
  7. Mix in the onion, then the parsley.
  8. Refrigerate for at least 1 hour.
  9. Taste and adjust the seasoning if necessary before serving.
