Ingredients

  • 1 cup finely chopped sweet onion
  • 2 pounds potatoes
  • 2 eggs
  • 1/2 cup flour
  • 1/3 cup chili crisp, plus more for serving plus more for serving.
  • 1 teaspoon kosher salt
  • Peanut oil for frying
  • Sour cream to serve

Instructions

  1. Peel potatoes and shred them in a food processor (grate them if you do not have a food processor)
  2. Mix the chopped onion with the shredded potatoes
  3. Using a sieve or a dishcloth, squeeze as much liquid as you can out of the potato/onion mixture.
  4. Let it sit for 20 minutes and squeeze again.
  5. Add eggs, flour, chili crisp, and salt, and mix thoroughly.
  6. Place a layer of paper towels next to the stove, safely away from any open flame.
  7. Add about 1/3 cup of peanut oil to a frying pan and heat.
  8. When the oil is shimmering, form small balls out of the mixture.
  9. Place in the pan, and gently flatten with a spatula.
  10. After a few minutes, flip the latkes to brown on both sides.
  11. Transfer to the paper towels. Gently pat to remove excess oil.
  12. Serve with sour cream and extra chili crisp.
