Blame this Star Anise Ice Cream on this store a few blocks from our apartment here in the East Village. I just can’t stay away from it.
Inside are magical shelves filled with a dazzling array of spices, powders, and herbs.

They also carry a wide variety of nuts and dried fruits in addition to Indian groceries. I get my almond flour there for macarons. Last Thanksgiving it was just a dash around the corner to pick up star anise powder for my Gingerbread Persimmon Curd Trifle with Star Anise Whipped Cream.
What should be a five-minute errand turns epic. Once inside, browsing brings a lot of distraction.  Consequently, I leave with way more items than originally intended. The variety of powder ingredients especially intrigues me as I am always looking for a new flavor to add to macaron shells.

What is Star Anise?

Star anise is a spice that comes from the fruit of the Illicium verum tree. This tree is native to China and Vietnam. It’s known for its unique star-shaped pods and strong, aromatic flavor that resembles licorice. Each “arm” or point of the star contains a shiny seed. however, it’s the pod, not the seed, that holds most of the potent oils and flavor.

Perfect for this Star Anise Ice Cream, the flavor of Star anise is warm, sweet, and spicy. So it’s similar to fennel or anise seed, though it’s a bit more intense. It’s a staple in Chinese cuisine, especially in slow-cooked dishes and broths. Additionally, it is also popular in Indian and Vietnamese cooking. Star anise is a key ingredient in Chinese five-spice powder and is commonly added to soups, stews, and teas for its complex aroma. It’s also known for its antimicrobial and antioxidant properties, so it is a healthful addition to cooking!

Anyway, back to the ice cream. Creative ways to use up some of that star anise powder? Ice cream comes to mind. The recipe contains a small amount for a more delicate flavor. Additionally,  vanilla extract for flavor balance and chocolate chips makes this ice cream just perfect. I love it and it now holds a place in my favorite homemade ice cream rotation.

Star Anise Chocolate Chip Ice Cream

Ingredients

  • 2 cups heavy cream
  • 2 cups whole milk
  • 1+1/2 teaspoons star anise powder
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 3 egg yolks
  • 3/4 cup chopped bittersweet chocolate

Instructions

  1. In a medium saucepan bring milk, cream, star anise powder, and vanilla extract almost to a boil.
  2. Set aside and let steep for 30 minutes.
  3. Whisk egg yolks with white granulated sugar.
  4. Reheat the creamy mixture.
  5. Slowly pour a small portion into the egg/sugar mixture whisking quickly to temper the eggs.
  6. Scrape the tempered mixture back into the pan.
  7. Reheat stirring occasionally until the mixture thickens a bit, coating the back of a wooden spoon.
  8. Remove from heat and strain into a ceramic or metal bowl.
  9. Cover with plastic wrap, making sure the wrap touches the top of the mixture.
  10. Refrigerate for at least 3 hours or overnight.
  11. Transfer the mixture to an ice cream maker and follow the manufacturer's directions.
  12. When ice cream reaches a soft serve consistency, stir in the chocolate chips.
  13. Transfer the ice cream to a container and place it in the freezer until it hardens.
  14. Garnish with whole star anise and serve.

First off, that store is like my Willy Wonka's. Oh man, I wouldn't know where to start. I would probably just take after you, grab something, and make ice cream out of it. Because that's seriously the best. As is this recipe (anise is one of my favs). Thanks for your creativity once again <3

If I had a store like that by my place, I might just go broke. haha.. I love that ice-cream! Making ice-cream is something that has never crossed my mind! But you make it seem so easy!

I could spend hours in that store! I think it might get expensive… I love chocolate chip ice cream. Now I'm seriously thinking about going to get a scoop for my lunch!

Oh, I wish I had a grocery store next door laden with all these spices, Lora. Looks wonderful, as does your ice cream. Love the combo with the star anise. Great idea!
