Sour Cherry Peanut Blondies with Peanut Butter Frosting

With leftover sour cherries and a half a jar of peanut butter sitting in the pantry, this is what I came up with.
Peanut oil was added to the batter and the result is one dense, nutty blondie. I also left the peanuts whole instead of chopping them up. Each bite is a flavor bomb.

Sour Cherry Peanut Blondies with 
Peanut Butter Frosting
For the Blondies:


Ingredients:
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 cup firmly packed light brown sugar
  • 1 stick (1/2 cup) butter, melted
  • 1 large egg
  • 1 teaspoon vanilla
  • 3 tablespoons peanut oil
  • 1 cup sour cherries, pitted
  • 1 cup salted peanuts

Directions:
Preheat oven to 350 degrees F
Grease an 8″x8″ square pan.
In a separate bowl, whisk the flour and baking powder together. Set aside.
Melt the butter, transfer to the bowl of a mixer beat in the sugar. 
Add egg and combine.
Beat in vanilla and oil.
Add the dry ingredients in three parts, incorporating each part throughly. Stop mixer after last part is just combined.
Stir in the sour cherries and peanuts.
Scrape batter into the pan and bake for approximately 30 minutes or until a knife inserted in the center comes out dry.
Remove from oven and glaze immediately.
De-pan when cooled completely.
For the peanut butter frosting:
Ingredients:
3/4 cup peanut butter
3/4 cup peanut butter chips (I used Reese’s)
Directions:
Melt peanut butter and chips together in the microwave or in a pan until smooth and spreadable.
