Stalking the farmers markets almost daily has become part of my new routine these past weeks. I’ve made no secret of my heirloom tomato obsession.
Late to the heirloom tomato party, mostly because I had no access to them in Germany, I plan to enjoy them until the last day of the season. A few days ago I managed to avert my eyes from these dazzling beauties to find something I never heard of, lemon cucumbers.
Although these cucumbers resemble lemons in shape and color, they don’t taste anything like them but are delicious nonetheless. When we had guests over last week I combined them with some of the 1,000 heirloom tomatos I have in captivity to make a lovely summer salad.
Turning the leftovers into salsa and serving them with whole grain tortilla chips was a no brainer. Fresh, colorful and delicious, this salsa was a nice change from the traditional recipe.
Heirloom Tomato and
Lemon Cucumber Salsa
Lemon Cucumber Salsa
Ingredients:
- 2 cups heirloom tomatoes
- 2 small lemon cucumbers
- 1/2 large sweet white onion
- 4-5 tablespoons organic pre-made salsa
- 2 tablespoons organic olive oil
- 1 tablespoon white balsamic vinegar
- 1 large clove of garlic shredded
- 1 1/2 tablespoons chopped jalapeños
- 1 teaspoon of the jalapeño liquid from the jar or can
- Juice from half a lime
- Chili powder
- Salt and pepper to taste
Directions:
- Pulse the tomatoes, cucumbers and onions in the food processor until everything is broken down until large chunks.
- Add the rest of the ingredients and pulse until smooth.
- Salt and pepper the salsa to your taste.

heirloom tomatoes are my favorite part of summer. I bet they really MAKE the salsa!

I would never have thought to put white balsamic vinegar in salsa. I'll bet it's delicious–looks that way, at least!
I enjoyed seeing all the *new foods* when you were posting from Germany. Glad to see that I'm still finding new food now that you are posting from NYC. The salad and the salsa (great idea) look wonderful.
