Baily’s Irish Cream Lace Cookies for St. Patrick’s Day

This St. Patrick’s Day weekend I plan to attend a party in upstate New York hosted by the Gays of Sullivan County. Yes, that’s their name. It might be a reality show soon. You never know. I especially like the idea of attending a gay St. Patrick’s Day party because of all the years those idiots in NYC who organize the St. Patrick’s Day parade would not let gay people march. It’s not the only city that has banned gays from marching that day but wow New York, for a city that prides itself on it’s diversity, that’s just completely moronic.
Anyway I will get off my gay rights St. Patrick’s Day Irish Spring soapbox in time to present these delicious cookies.

I’ve always loved lace cookies and they were often my first choice when buying cookies at a bakery. This is the first time I tried to create them at home and was surprised with how quick and easy they are to make. I used a wonderful recipe by Two Peas & Their Pod. You can find it HERE. It was perfect and the cookies were delicious.
The only changes I made were to leave out the cinnamon in the cookies and I added an airplane serving size bottle of Bailey’s Irish Cream to the chocolate.
When adding the liqueur to the chocolate, it initially seized up but I just kept stirring it over medium heat in a double boiler. Eventually the chocolate smoothed out again making it perfect to slather between the lace cookies.

So does New York not think that there are gay Irish-Americans or something? Sheesh. These cookies look amazing–I love lace cookies and I love Irish Cream, so these would be irresistible!

Oh my giddy aunt these sound amazing! Love the chocolate and baileys! Cannot believe the powers that be in NYC would be so homophobic as to not let gay people march on St Paddys day…hello? it's the 21st century! Good on ya for bringing awareness to it! x

ooooh! Something IRISH for the IRISH Day!! Wow, never knew that St. Patrick's Day was so huge in the states! Vancouverites are not that big on St. Patrick's. To most of them, it's merely another reason to drink (green) beer! Of course for the rest of us non-drinkers and non-irish, we probably aren't really even aware of the day it falls on. hehe

Oh I love lace cookies but I have never made them. That may just change very soon after looking at these beauties. Love that you made a sandwich cookie with them and I know that filling is amazing. Thanks for the link to the recipe and I hope you have a blast at your party!
