I’ve written about my better late than never discovery of these frosting flavor packets from Duncan Hines.
Ever since I had the idea to throw one into a batch of meringues I was hooked on coming up with ideas for using these little magical packets in everything but frosting. I suppose I will get around to actually using them is a batch of frosting one of these days.
Anyway, I had the idea to use some molds to create a pattern on homemade marshmallows to make them look embossed. It worked pretty well even though I wasn’t too happy with the molds I bought. Next time I will get a better mold with a smaller pattern.
Pink Lemonade seemed like an appropriately festive flavor to go with. I swapped out the flavorings in my favorite marshmallow recipe with two packets. Like the meringues, the packets also colored the marshmallow batter. You could amp up the color if you wish by using a few drops of food coloring. I greased the molds, placed them in a large baking sheet and poured the marshmallow batter over them to set.
Once ready, I flipped it over, and gently pulled the molds off and used cutters to make the letter shaped MOMmallows.
Wrapped in a cellophane bag and tied with a ribbon, these make a cute sweet treat for any mom out there.

Maybe i should make a set of marshmallows that spell out "mom" as decoration for the cake I'm making her! Love that you chose pink lemonade to flavor them…so good!
