My herbal harvest creations are all stashed in various nooks and crannies of my kitchen. Over the weekend I uncovered the spicy oregano sugar. This herb was the star of my garden this year. I almost cried when I harvested the last of it because I put it in everything. for example, on pasta, in salad dressings, and even, in cocktails. Fresh fragrant oregano with a big spicy kick adds a lot of a lot to a lot of recipes. How can you go wrong?
So it is an understatement to say it was hard to contain my excitement when I uncovered the spicy oregano sugar. Coincidentally, recent cravings for some big soft sugar cookies had me thinking in that direction. This Spicy Oregano Sugar Cookies recipe is adapted from this fabulous one from Just a Pinch. Using this infused sugar was one of the best ideas ever.
Infusing Sugar with Herbs
After the herbs are clean and dried. Crush the herbs before adding them to the sugar. This releases their oils and flavors the sugar. Transfer the herbed sugar to a jar with a tight-fitting lid. Then store the jar in a cool dark place for a few weeks. Make sure you take out the jar and shake it up a bit occasionally to make sure the flavor is distributed through the sugar.
Here’s a tip on how to double down on the flavor: The spicy oregano-infused sugar is in the cookie batter. Also, I rolled them in the sugar before baking.

Spicy Oregano Sugar Cookies
Ingredients
- 1 cup salted butter room temperature
- 1½ cups spicy oregano-infused white sugar
- 1 egg
- 2¼ cups all-purpose flour
- ½ teaspoon baking powder
- 1 teaspoon vanilla
- 1/2 teaspoon lemon extract
- 1/3 cup spicy oregano-infused sugar for rolling cookies
Instructions

Preheat oven to 350º F.

Line baking sheets with parchment paper.

Whisk together the flour, baking powder, and salt.

Sprinkle the 1/3 of spicy oregano sugar out on a flat plate.

Mix the unsalted butter and spicy oregano sugar until creamy, about 3 minutes.

Mix in the egg, vanilla, and lemon extract.

Add the dry ingredients 1/3 at a time until just combined.

Use a teaspoon or cookie scoop to portion out the dough.

Roll it into a ball, then roll in the spicy oregano sugar.

Place on the baking sheet. Use a wooden spoon to flatten them out.

Bake for 8-10 minutes.

Transfer the cookies to a wire rack. Let cool completely. You can snitch one while it's warm to taste (recommended)
