Spicy Smoky Adobo Hummus

Whenever I buy cans of Chipotle in adobo sauce, no matter what recipes I’m using them for, I always seem to have an excess of that thick, spicy adobo sauce surrounding the peppers. I hate to waste such a precious and flavorful ingredient. So I save the sauce until I can find some way to use it. So hello Spicy Smoky Adobo Hummus!

Chipotle in adobo sauce is the culinary secret weapon your pantry has been waiting for.

Chipotles are dried, smoked jalapeños swimming in a rich, tangy, slightly sweet sauce made with tomatoes, vinegar, garlic, and spices. As a result, every spoonful adds smoky heat and depth to your dishes, like in this Spicy Smoky Adobo Hummus. You can stir it into soups, blend it into marinades, or sneak it into taco fillings for an instant flavor boost. Moreover, Chipotle in adobo is versatile, so a little goes a long way. Spicy Smoky Adobo Hummus

So recently whipped up a batch of hummus. Since I never seem to be able to leave poor hummus alone, I added some of the spicy, fragrant adobo sauce to the hummus. This Spicy Smoky Adobo Hummus is instantly my new favorite appetizer. Consequently, the deep flavor of the adobo sauce not only adds heat, but also an entirely other layer of smoky flavor. It’s the fastest way to upgrade plain hummus. The only regret I had was that I did not make a double batch.

Spicy Smoky Adobo Hummus

I always remove the skins from canned chickpeas. The result is a much smoother and creamier hummus. However, if you skip this step, this recipe comes together in about 15 minutes. If you have an extra chipotle pepper hanging out, use it for garnish.

Adobo Hummus

Ingredients

  • 1 - 15.5 oz can of chickpeas
  • 2 tablespoons tahini
  • 1 garlic clove
  • 2 teaspoons lemon juice
  • 2 teaspoons adobo sauce
  • 1 tablespoon olive oil
  • 2 teaspoons water
  • Kosher salt and freshly ground pepper to taste

Instructions

  1. Drain and rinse the chickpeas. Remove the outer skins and discard.
  2. Place the chickpeas, tahini, garlic clove, lemon juice and adobo sauce in a food processor and puree.
  3. While the processor is running drizzle in the olive oil, then the water.
  4. Add the sugar and process until everything is combined.
  5. Pulse in Kosher salt and freshly ground pepper to taste.
  6. transfer to a bowl and serve.
