What to do with leftover eggnog is a question as old as Christmas itself. Probably predates Christmas actually. Raise your hand if you don’t want to see eggnog in your fridge after New Year’s Day. this is me raising my hand.  However, I detest wastefulness, especially when it comes to food. Consequently, I could not bear to throw it out. This Eggnog Banana Bread with Nutmeg Streusel is a good solution.

Leftovers are one thing. They disappear quickly. However, leftover ingredients can take a bit of creativity to get rid of if you don’t want to just straight up throw them out.

Last year, at the end of all our holiday celebrations (I had a sit-down dinner for 12 at Christmas and a New Year’s Eve party with the neighbors)  I had some seriously ripening bananas to deal with as well as all the other leftover ingredients.

So I am pregaming your eggnog usage by posting this recipe. Use it to impress your holiday guests, holiday menu, make some as hostess gifts or tuck it away to make after the holiday.

Eggnog flavor turned out to be a perfect match for banana flavor. Who knew? Nutmeg is also something I find I have way too much of in January. So I was looking to get rid of some of it as well.  I threw together a quick nutmeg flavored streusel to throw on top, to mimic the sprinkle of nutmeg many people add to a mug of eggnog. Consequently, this Eggnog Banana Bread with Nutmeg Streusel surpassed my expectations.

Be Aware:

Eggnog adds a significant amount of moisture to the batter so bake time is loooong. Every oven is different so start checking the bread after the 1 hour.

You can leave out the streusel entirely if you are worried about the sugar level. Just sprinkle some nutmeg on top of the batter in the pan before baking.

Ingredients

For the cake:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 stick 1/2 cup unsalted butter, room temperature
  • 1 +1/2 cups white granulated sugar
  • 2 eggs room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup eggnog
  • 3 ripe mashed bananas

For the Brown Sugar Streusel:

  • 1 stick 1/2 cup unsalted butter room temperature
  • 3/4 cup flour
  • 3/4 cup brown sugar
  • 1 tablespoon ground nutmeg

Instructions

Make the brown sugar streusel:

  1. Place the unsalted butter, brown sugar and all-purpose flour into a bowl. Use your fingers or a large fork to rub the mixture together until it begins to combine.
  2. Add nutmeg and continue to combine until the mixture resembles streusel. Set aside.

Make the cake:

  1. Preheat oven to 350 degrees F.
  2. Spray or grease a medium size loaf pan.
  3. Whisk together flour, baking soda, salt, and cinnamon and set aside.
  4. Cream together butter and sugar.
  5. Add eggs and incorporate thoroughly.
  6. Add vanilla and eggnog.
  7. Mix in bananas.
  8. Slow mixer down to low speed and slowly add the flour mixture.
  9. Pour the mixture into the prepared loaf pan and top with the streusel mixture on top.
  10. Bake for 1 hour 30 minutes or until a cake tester or knife inserted into the center of the bread comes out clean.
  11. Remove from the oven and let the bread stand 15 minutes before removing from the pan.
  12. Transfer to a wire rack and let cool almost completely before slicing and serving. This bread is extra delicious served a bit warm.
