Mini Pancake Berry Skewers

These Mini Pancake Berry Skewers are not so much of a recipe. More like an idea. I saw this concept in a German Cooking magazine and had to share. The red, white, and blue visual appeal to my patriotic recipe collection. A selection of summer’s ripe, juicy berries sandwiched between fluffy mini pancakes. What is bad about that?

The original “recipe” includes banana slices on the skewers with the berries. However, I left them out. Admittedly, the banana slices would provide more substance to each skewer. Alternatively, I love the way the mixture of blackberries, raspberries, and blueberries look and taste. Use whatever fruit or berry you like to create the skewers. For example, strawberries and gooseberries would also work well.
