These Mini Pancake Berry Skewers are not so much of a recipe. More like an idea. I saw this concept in a German Cooking magazine and had to share. The red, white, and blue visual appeal to my patriotic recipe collection. A selection of summer’s ripe, juicy berries sandwiched between fluffy mini pancakes. What is bad about that?
Jump to RecipeThe original “recipe” includes banana slices on the skewers with the berries. However, I left them out. Admittedly, the banana slices would provide more substance to each skewer. Alternatively, I love the way the mixture of blackberries, raspberries, and blueberries look and taste. Use whatever fruit or berry you like to create the skewers. For example, strawberries and gooseberries would also work well.
Perfect for a brunch or barbecue potluck, serve this as a light snack or a dessert. Memorial Day, July 4th holiday or Labor day are perfect occasions to make these Mini Pancake Berry Skewers. Furthermore, these are done in 20 minutes start to finish. Consequently, this recipe is a real time saver. However, the result looks like you spent way more time in the kitchen.
Firstly, whisk together a simple pancake batter. Secondly, use a half teaspoon measuring spoon to ladle out the pancake batter into a pan laced with hot vegetable oil. Then, fry the mini pancakes for a few minutes until golden brown on both sides. Transfer to a plate.
Thirdly, when the mini pancakes are cool enough to handle, thread them through the skewers alternating with the berries. Sprinkle with powdered sugar before serving.
The order and amount of the mini pancakes and berries used on each skewer are up to you. To get 6-7 skewers, I used five mini pancakes per skewer. However, to get more finished skewers, use fewer pancakes and more berries.
Mini Pancake Berry Skewers
Ingredients
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1 pinch salt
- 2 tablespoons sugar
- 1/4 teaspoon pure vanilla extract
- Scant 1/2 cup milk
- 1 egg
- 2 tablespoons vegetable oil
- 1+1/2 cups mixed berries
- Powdered sugar for sprinkling
Instructions

Whisk together the flour, baking powder, salt, and sugar.

In a separate bowl whisk together the vanilla milk and egg.

Add the wet ingredients to the dry and mix until everything is combined.

Heat the oil in a medium-sized skillet. Place a plate by the stove.

Use a 1/2 teaspoon to measure out small quarter-sized portions of batter.

Add to the pan and fry until both sides are golden.

Transfer the mini pancakes to the plate.

Thread a pancake through the skewer. Add a berry, then a pancake, repeat 3-4 times.

Place the finished skewer on a serving plate.

Repeat until you use up all the ingredients.

Sprinkle powdered sugar over the top and serve.
