These Lemon Mint Lamb Fritters are a perfect appetizer for your family Easter or Spring celebration. Also, they are super easy to make. Combine ground lamb with tart lemon juice, lemon zest, and ribbons of fresh mint. Shape into small balls, pan fry and done.
This spring celebration appetizer is delicious served on its own. However, whip up a dipping sauce with what you already have on hand. For example, add kosher salt, freshly ground pepper, lemon juice and zest to greek yogurt. Alternately, spike the yogurt with paprika, garlic powder or oregano. Substitute sour cream or creme fraiche for the greek yogurt.

Lemon Mint Lamb Fritters
Ingredients
- 1 lb. ground lamb
- 2 tablespoons chopped fresh mint plus some for garnish
- 2 teaspoons freshly grated lemon zest plus some for garnish
- 1 tablespoon freshly squeezed lemon juice
- 2 tablespoons all-purpose flour
- salt and freshly ground pepper
- 3-4 tablespoons oil for frying
Instructions

Combine the first 5 ingredients in a bowl.

Season with salt and freshly ground pepper.

Use a tablespoon to scoop out portions of the mixture. Roll each portion into a ball between your palms and flatten.

Heat the oil in a skillet. Place a layer of paper towels next to the stove.

Add the lamb fritters.

Cook on both sides until browned.

Transfer the fritters from the pan to the paper towel to drain.

Gently pat off excess oil.

While the fritters are still warm, transfer to a serving platter.

Sprinkle lemon zest over the fritters.

Garnish with mint leaves and lemon slices and serve.
