Lebkuchen Chocolate Chip Ice Cream is a Christmas miracle from your freezer. Like my Lebkuchen Vodka Martinis, this ice cream tastes like Christmas. Furthermore, it has a delicious deep spiced flavor.

In addition, I admit I am a bit addicted to making my own Lebkuchen spice. Usually, I bring packets I buy in German supermarkets back to the USA.  As easy and whattimesaver that is, they end up sitting in my kitchen cabinet. Consequently,  I prefer to mix lebkuchen spice up myself.

Lebkuchen Chocolate Chip Ice Cream

This Lebkuchen Chocolate Chip Ice Cream Recipe has deep flavor and is fairly simple to throw together. I made mine in stages. First, I had to freeze my Kitchen Aid ice cream attachment for my Kitchen Aid mixer. The ice cream bowl has to stay in the freezer for 24 hours before using it.

Since the custard has to be chilled, I also made the the day before. I churned the ice cream the next day and stuck it in the freezer. It was ready to serve that evening. Consequently, this ice cream is not much work when the recipe steps break down over days. As a result, it’s easy to integrate into your holiday cooking schedule.

To top this  Lebkuchen Chocolate Chip Ice Cream when it’s served, sprinkle some course or raw brown sugar over the top. It gives this dessert an extra festive sparkle and sweetness.

TIPS for making this recipe:

  • Pregame – Make the custard the day before and chill. Then, churn and freeze the ice cream the next morning to serve with dinner.
  • Premix – mix your lebkuchen spices up to 3 days before. Place in an airtight container or a ziplock.
  • Variations – Skip the chocolate chips and add chopped candied fruit or candied orange peel. Furthermore,  go nutty. Add almonds, walnuts, or sexy pistachios.

Ingredients

  • 1+1/4 cups heavy cream
  • 1 cup whole milk
  • 1/4 cup granulated brown sugar
  • 1 orange
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground anise
  • 2 tablespoons semi-sweet chocolate chips
  • 4 egg yolks
  • 2 teaspoons vanilla extract
  • 3 tablespoons dark rum
  • 1 cup semi-sweet chocolate chips
  • Course brown sugar for sprinkling

Instructions

  1. Wash & zest the orange

  2. Heat zest, 3/4 cup of cream, milk, sugar & spices.

  3. Melt the 2 tablespoons of chocolate chips into the cream.

  4. Whisk together the yolks, vanilla, and rum.

  5. Strain the hot cream and temper into the yolk mixture.

  6. Place the pot in a cold water bath. Let cool.

  7. Whip the rest of the heavy cream into stiff peaks and fold into the cream mixture. Let cool.

  8. Cover with plastic cling film making sure it’s touching the surface of the cream.

  9. Chill in the refrigerator for at least 2 hours or overnight.

  10. Place in an ice cream machine a process according to the machine’s manufacturer’s instructions.

  11. Mix in the chocolate chips

  12. Transfer to an ice cream container and chill 4 hours.

  13. Scoop ice cream into dishes. Sprinkle with brown sugar and serve.
