This Blushing Girl Whipped Dessert is one of the easiest Valentine’s Day desserts you can make. As a matter of fact, it’s one of the easiest desserts you can make, period.  This light, fluffy meringue dessert recipe has a charming name, “Errötendes Mädchen” in German, meaning “blushing girl”. The hint of pink color in the dessert comes from red currant jelly. This is what gives this whipped treat its moniker. This dessert originates from the German state of Schleswig-Holstein.

Raw egg whites combined with powdered sugar and red currant jelly are whipped for 30 minutes until fluffy.  Unflavored gelatin is then added to give the dessert to heft.

This dessert is refrigerated for 6 hours. Consequently,  it’s a great make-ahead dish. If the meringue separates after its turn in the fridge,  return the dessert to the mixer. Use the whisk attachment at high speed to reconstitute the meringue.

This Blushing Girl Whipped Dessert is traditionally made with red currant jelly. However, strawberry or raspberry would work just as well. Use a rose-flavored jam to make this an extra-special treat for Valentine’s Day. All of these give this fluffy dessert its “blush” as well as adding a lovely flavor twist.

Garnish this Blushing Girl Whipped Dessert with sugar pearls, glitter sugar, whipped cream, or a spot of jelly. Nuts are also a good option.

Warning: If you are squeamish about consuming raw egg whites, perhaps this recipe is not for you. To air on the safe side, use pasteurized (heated to a certain temperature to kill bacteria) egg whites. These have been treated to eradicate possible salmonella and other bacterial contamination. Please note: Salmonella can cause serious health problems in the elderly or infants.

Ingredients

  • 4 egg whites*
  • 3/4 cup powdered or confectioner's sugar
  • 2 envelopes of unflavored gelatin
  • 1/2 cup red currant jelly

Instructions

  1. Using the whisk attachment of a mixer, whip the egg whites into stiff peaks.

  2. Add the powdered sugar and whip to combine.

  3. Add the red currant jelly and let mix at high speed for 30 minutes.

  4. Dissolve the gelatin in warm water and add to the mixer.

  5. When gelatin has been completely absorbed into the whipped mixture and the dessert resembles whipped meringue (you should be able to turn the bowl upside down and the mixture should stay in place) turn off the mixer and transfer the fluffy dessert to a glass bowl.

  6. Cover the bowl tightly with plastic cling film and refrigerate for 6 hours before serving.

  7. Remove the dessert from the refrigerator and spoon into serving bowls.

  8. Garnish** and serve.

Recipe Notes

*If the mixture has separated showing liquid on the bottom of the bowl, transfer the contents of the bowl back into the mixer and use the whisk attachment to whip the mixture again at a high speed until the dessert is once again fluffy and light.

** Garnish with whipped cream, sugar pearls, or glitter, a teaspoon full of red currant jelly, or fresh red currants. Chopped nuts would also be a lovely garnish option.
