Bratwurst Beer Gulasch
Ingredients
- 1.5 lbs potatoes
- 2 cups chopped bell peppers
- 1 yellow onion
- 2 garlic cloves
- 5 bratwurst
- 2 tablespoons extra virgin olive oil
- Kosher salt and freshly ground pepper
- 1 tablespoon Sweet or smoked paprika
- 1 tablespoon tomato paste
- 1 +1/3 cups dark beer
- 1 cup vegetable stock
- 1 - 29 oz can pureed tomatoes
- 1/3 cup chopped fresh parsley
Instructions

Peel and dice the potatoes.

Cut the bratwurst into rounds.
