Ingredients

  • 1 cup morello cherries
  • 14 oz sweetened shredded coconut
  • 2 tablespoons morello cherry juice from the jar
  • 2 eggs
  • 1 cup white granulated sugar
  • 2 tablespoons melted unsalted butter

Instructions

  1. Preheat oven to 325F. Line two baking sheets with parchment paper.
  2. Chop the cherries.
  3. Mix the shredded coconut with the cherry juice.
  4. In a separate bowl, beat the eggs together with a fork.
  5. Add the eggs, melted butter, and sugar to the bowl and mix to combine.
  6. Mix in chopped cherries
  7. Use a tablespoon to drop round spoonfuls onto the prepared baking sheets.
  8. Bake for 20 minutes.
  9. Transfer to wire racks. Let cool completely.
  10. Plate and serve.
