Ingredients

Sweet Pistachio Salad Dressing:

  • 3/4 cup raw pistachios
  • 1/2 cup extra virgin olive oil
  • 2+1/2 teaspoons pistachio cream
  • 1 tablespoon white wine vinegar
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon water
  • Kosher salt and freshly ground pepper

Salad:

  • 1 small head radicchio
  • 1 red fennel stalk
  • 1 green fennel stalk
  • 4 oz butter lettuce
  • 1 small red onion
  • 1 cup shaved parmesan cheese
  • 1/3 cup raw pistachios for garnish

Instructions

Make the pistachio dressing:

  1. Puree the pistachios, oil, pistachio cream, vinegar, and lemon juice.
  2. Add the water to thin it out.
