Ingredients

  • 2 large shallots
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon butter
  • Kosher salt and freshly ground pepper
  • 1-2 pinches sugar
  • 6 large Eggs
  • 1 scallion
  • 3 tablespoons mayonnaise
  • 1 tablespoon Apple cider vinegar
  • 24 slices multi-grain bread
  • Curly Parsley

Instructions

  1. Cut the shallots thinly into rings.
  2. Heat the olive oil and butter in a skillet.
  3. Add the shallots and sauté to coat.
  4. When they become transparent, season with salt, pepper, and sugar.
  5. When the shallots start to turn brown, remove from the heat and set aside. Let cool completely.
  6. Boil the eggs for 8 minutes.
  7. Run them under cold water.
  8. Peel, cut into quarters, and place in a bowl.
  9. Chop the scallion and add it to the eggs,
  10. In a small separate bowl, whisk together the mayonnaise and apple cider vinegar.
  11. Pour it over the eggs. Mash everything together.
  12. Mix in the caramelized shallots.
  13. Season with salt and pepper.
  14. Use a 2 Inch Star of David cutter to stamp shapes out of the bread.
  15. Arrange a layer of 10 on a platter.
