Red Velvet Pepperoni (cookies) for April Fools’ Day & March’s Funny Food Blogger Posts

Red Velvet Pepperoni Cookies

You probably thought by the title of this post that I actually made cookies out of  pepperoni. Yes I am crazy enough to do that, but not this time.  So double April Fools!

 

I love to make fake foods. If I ever had the urge to write a cookbook (I don’t) I would fill it with fake food recipes. Like cocktail weenies that are actually marzipan cookies.

And Sushi that are really candy truffles.

And lotsah fake matzah.

These red velvet pepperoni cookies are a riff on chocolate salami cookies. I added red velvet flavoring to the mixture, rolled two smaller, thinner logs and coated the outside with powdered sugar. This is a no bake cookie recipe.

 

The cookies are very rich so making them a pepperoni size version was actually a good idea.  Happy April Fools’!

 

 

Red Velvet Pepperoni Cookies
(Barely adapted from Chocolate Salami recipe from Hannaford)

Ingredients:

  • 12 ounces bittersweet chocolate chips
  • 1 stick butter
  • 2 cups crushed Vanilla Wafers
  • 1/3 cup blanche slivered almonds
  • 1 tablespoon red velvet flavoring
  • Powdered sugar for coating

Directions:

  • Place the butter and the chocolate in a double boiler and melt, stirring until smooth.
  • Stir in the vanilla wafer crumbs and almonds.
  • Add the red velvet flavoring making sure it’s mixed in throughly.
  • Let mixture cool to room temperature.
  • In the meantime lay two sheet of plastic wrap on your workspace and spray with baking spray.
  • Spoon half the cookie batter into a long row on one sheet of plastic and repeat with the other half of the batter.
  • Roll the dough up in the plastic and twist the ends.
  • Gently roll the plastic covered dough between your hands to round it into a pepperoni shape.
  • Place in freezer and after 10 minutes, check the dough and make sure it hasn’t flattened out on one side. If it has, roll it between your hands again to reshape it.
  • Leave dough in freezer  overnight.
  • Remove dough from freezer and let it thaw out for about 20 minutes.
  • Remove plastic wrap, rub with powdered sugar.
  • Slice each roll with a sharp knife cutting the cookies into pepperoni sized pieces and serve.

I would have never thought these were cookies..it looks like a real pepperoni! I'm astounded! What a great for April Fool's Day! Loving the matzoh and cocktail weinies too!
