Bread, Wine & Cheese Leftover Casserole

Raise your hand if, after parties and dinners, you have leftover cheese from the cheese plate appetizer. Also hanging around are rolls or sliced baguettes still in the basket and half or quarter-full bottles of wine. This Bread, Wine, and Cheese Leftovers Casserole is your one-dish solution for repurposing those leftovers.

With the holiday season just around the corner, I am looking for easy leftover solutions. Of course, you can freeze the bread, use the cheese in omelets, and drink the wine later, or use it in other recipes or sauces. However, this Bread, Wine & Cheese Leftovers Casserole does all that in one shot.

The result is delicious. The bigger the cheese variety you have left over, the tastier the results will be. This recipe comes together so fast with few ingredients. therefore, it’s perfect for a last-minute dish.

I created this Bread, Wine & Cheese Leftovers Casserole with leftover sourdough baguette, brie, and Swiss cheeses, and some leftover Pino Grigio. If you are squeamish about eating brie with the rind, simply cut it off before adding it to the recipe.

This dish is also the perfect morning after-the-party grub to serve. It soaks up the alcohol in your system. At least, in my mind, it does. A good hangover food recipe.  It also works well for brunch, a side dish, or even an appetizer, serving smaller portions to a larger crowd.

Substitutions:

Feel free to add additional ingredients to the casserole or swap out what I have done here.  If you served pepperoni or sausages along with the cheese, throw those in as well.  Whatever herbs you have wilted in the crisper will also be grateful to be of use. Additionally, this is also a great freezer cleanout recipe for frozen bread, cheese, and meats you have hanging around in there.

I used full-fat milk but if the recipe is already too rich for your tastes, use skim milk or a low percentage fat substitution.

Bread Wine Cheese Leftovers Casserole

I used an 8″ by 10″ casserole dish to bake the bread and cheese dish. However,  ignore my exact ingredient measurements above. Just use the proportions as a guideline and use up whatever you have to create a larger or smaller version.

Ingredients

  • 1 small-medium sized loaf of bread or baguette cut into small pieces.
  • 1/4 cup unsalted butter
  • 1 tablespoon flour
  • 2 cups milk
  • 2 cups Leftover cheese. I used Brie. cut into small pieces
  • 1/2 cup dry white wine
  • freshly ground pepper
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup shredded Swiss cheese

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Grease an 8" x 10" casserole dish.

  3. Line the dish with the bread pieces and set aside.
  4. Heat the butter in a skillet. when the butter is bubbling, quickly Stir in the flour, thickening the mixture. 

  5. Add the wine and the milk to the pan and bring to a boil.
  6. Stir in the brie. Season with freshly ground pepper and ground nutmeg.
  7. When the brie has melted. Remove from heat and pour over the bread in the prepared pan.
  8. Scatter the shredded Swiss cheese over the top.
  9. Place in oven and bake for 20 minutes until bubbly and golden on top.
  10. Remove from oven, let cool for 10 minutes before serving.
