Super Greens Minestrone
Ingredients
- 12 oz small shaped Spinach or green pasta
- 1 white onion
- 2 cloves garlic
- 2 cups chopped spinach
- 2 cups chopped kale
- 1/2 cup chopped parsley
- 2 cups chopped broccoli heads
- 1 cup frozen peas
- 2 tbsp olive oil
- 6 cups vegetable stock
- 1 can cannelloni beans
- Kosher salt and freshly ground pepper
- 1/2 cup shredded parmesan cheese
Instructions

Cook the pasta for half the cooking time on the package.

Drain and rinse with cold water. Set aside.
