Ingredients

  • 12 oz small shaped Spinach or green pasta
  • 1 white onion
  • 2 cloves garlic
  • 2 cups chopped spinach
  • 2 cups chopped kale
  • 1/2 cup chopped parsley
  • 2 cups chopped broccoli heads
  • 1 cup frozen peas
  • 2 tbsp olive oil
  • 6 cups vegetable stock
  • 1 can cannelloni beans
  • Kosher salt and freshly ground pepper
  • 1/2 cup shredded parmesan cheese

Instructions

  1. Cook the pasta for half the cooking time on the package.

  2. Drain and rinse with cold water. Set aside.
  3. Peel and mince the onion and garlic.

  4. Heat oil in a large pot or Dutch oven.
  5. Add the onions and sauté until transparent.
  6. Mix in the garlic. And sauté until the garlic releases its aroma.
  7. Add the vegetables and sauté for a few minutes, until they wilt.
  8. Add the stock. Bring to the boil.
  9. Drain the white beans and rinse with cold water.
  10. Add the beans and frozen peas.
  11. When the pot is boiling again, turn the heat down, cover, and simmer for 10 minutes.
  12. Add the pasta and cook for another 3-4 minutes.

  13. Season with salt and pepper.
  14. Ladle into bowls, sprinkle with parmesan and serve.
