Lime Thyme Rhubarb Sorbet is another winning seasonal recipe.  I may have gone overboard this month with posting rhubarb recipes. However, it’s a short season for fresh rhubarb.  She’s such a tart. But in a good way. I have big love for this vegetable and never tire of using it to create new dishes. I’ll be back to my regularly schedule programming next month.

Lime Thyme Rhubarb Sorbet

Ingredients

  • 1.25 lbs fresh rhubarb trimmed and leaves removed
  • 1/2 cup sugar
  • 1/4 cup water
  • 1 lime
  • 1/4 cup sugar
  • 1/4 cup water
  • 1-2 teaspoons fresh thyme leaves

Instructions

  1. Chop the trimmed rhubarb stalks into small pieces

  2. Place rhubarb, 1/2 cup sugar, and 1/4 cup water in a large saucepan.

  3. Cook over medium heat until rhubarb has broken down to a pulp.

  4. Stir occasionally and squish out any lumps with a wooden spoon.

  5. Remove from heat. Let cool completely.

  6. Zest and juice the lime.

  7. In a separate small saucepan, combine the lime zest, lime juice, thyme leaves, and 1/4 cup each of sugar and water.

  8. Cook over low heat until the sugar dissolves.

  9. Remove from heat and let cool completely.

  10. Combine the rhubarb pulp with the lime thyme syrup.

  11. Chill for 1 hour.

  12. Process the mixture in an ice cream maker according to the manufacturer's directions.

  13. Transfer to a container and chill for 5 hours or overnight.

  14. Scoop and serve.
