Rösti-Crusted Roast Beef

Consequently, it is an ideal centerpiece for Christmas, Hanukkah, or New Year’s Eve celebrations.

Rösti-Crusted Roast Beef

At the heart of this dish is the Swiss Rösti, a beloved culinary creation that defines comfort food in Switzerland. Traditionally, Rösti consists of shredded and seasoned potatoes, pan-fried until golden and crispy. However, in this festive rendition, shredded russet potatoes are harmoniously paired with the tartness of Granny Smith apples. and chopped scallions This creates a delightful blend of textures and flavors. Particularly adding a unique twist to the classic Swiss dish.

Rösti-Crusted Roast Beef

Ingredients

  • 2 fresh scallions
  • 3/4 lb white or yellow potatoes
  • 1/2 lb Granny Smith apples
  • 1 tablespoon freshly squeezed lemon juice
  • 2 tablespoons bread crumbs
  • Salt and freshly ground pepper to taste
  • 1 large egg yolk
  • 1 three-pound whole roast beef.
  • 2 tablespoons canola oil (Plus 1-2 tablespoons for coating the roast.)
  • 4 tablespoons grain mustard.

Instructions

  1. Chop scallions into very small pieces.

  2. Peel and grate the potatoes.

  3. Peel, Core & grate the apple.

  4. Mix the grated potato and apple and strain well through a mesh sieve.

  5. Toss with the lemon juice.

  6. Mix in the scallions and bread crumbs.

  7. Season with salt and freshly ground pepper, then mix in the egg yolk.

  8. Preheat the oven to 350F. Line a baking sheet with parchment paper.

  9. Rinse the roast and pat dry with paper towels. Cut off any excess fat.

  10. Season with salt and freshly ground pepper on all sides.

  11. Brush the entire roast with canola oil.

  12. Heat oil in a skillet. Sear on all sides. Transfer to the baking sheet.

  13. When the roast has cooled enough to touch, coat the top and sides with mustard.

  14. Use your hands to coat the roast with the apple, and potato mixture, molding it tightly to the roast.

  15. Bake for 40 minutes.*

  16. Turn the oven heat up to 400 degrees F.

  17. Bake for another 15 minutes until the rösti coating is nice and crispy.

Recipe Notes

*40 minutes will bake the roast to a bloody medium rare. Bake longer if you want your roast to be medium-well or well-done.
