False rabbit, also known as “Falscher Hase” in German cuisine, is a traditional dish that mimics the appearance of a roasted rabbit but is made from ground meat, typically beef or pork. The name “false rabbit” comes from its deceptive appearance, as it resembles a whole roasted rabbit when cooked, hence the term “false.”

False Rabbit Mini Loafs consists of seasoned ground meat, often mixed with breadcrumbs, onions, herbs, and spices. Then, it is shaped into a loaf resembling the body of a rabbit. Sometimes, hard-boiled eggs are placed within the meat mixture to simulate the appearance of rabbit innards.  Use whatever herbs and spices you like.

Once assembled, the meat mixture is typically wrapped in bacon or thinly sliced pork fat. This adds flavor and moisture. It is then roasted or baked until golden brown and cooked through.

There are endless varieties of side dishes to serve with these False Rabbit Mini Loafs.  Go with either a vegetable or a carb. Steamed asparagus with butter and lemon would work perfectly. Roasted mini-potatoes doused in olive oil and sprinkled with flavored salt are also perfect.

Ingredients

  • 1/3 cup milk
  • 1 cup breadcrumbs
  • 1 onion
  • 4 garlic cloves
  • 2 lb ground beef
  • 1 tablespooon mustard
  • Kosher salt and freshly ground black pepper
  • 1 tablespoon dried oregano
  • 6 hardboiled eggs
  • 16 slices of bacon
  • 2 tablespoons warmed Honey

Instructions

  1. Preheat the oven to 350 degrees F.

  2. Soak the breadcrumbs in the milk in a bowl and set aside.

  3. Peel and dice the onion.

  4. Peel and mince the garlic cloves

  5. Mix the soaked breadcrumbs, chopped onion, garlic, and mustard with the chopped beef.

  6. Season with salt, pepper and oregano.

  7. Peel the eggs

  8. Divide the ground beef mixture into 6 equal parts.

  9. Wrap each around an egg.

  10. Then wrap 4 pieces of bacon around each meat bundle.

  11. Coat a casserole dish with olive oil.

  12. Place the meat bundles in the dish and bake for 40 minutes.

  13. 5 minutes before removing from the oven, brush each bundle with honey then finish baking.

  14. Remove from the oven and serve.
