I have a drawer full of flavored salts and salt varieties. From black lava to red clay to lemon, orange, and raspberry varieties. In fact, my collection is so comprehensive, that it even impressed a Cordon Bleu-trained chef friend. No doubt it’s been fun to collect these from my far-flung travels.  However, creating my own flavored salts is my project for this holiday season.

Red wine, sea salt and sage

Here’s the gist. Coarse sea salt gets a luxurious red wine bath. Consequently, turning it into a dramatic shade of burgundy. Then comes the sage—a sprinkle of fresh, aromatic leaves chopped and mixed in. The blend is spread on a parchment-lined baking sheet and baked at a low temp.  No rush, no fuss. Just some low and slow baking until the flavors fuse. Voilà! The red wine and sage essence are locked in, creating a versatile salt practically begging to be used.

After baking the salt, let it rest on the baking sheet overnight. Then, scrape it off the sheet and put it in a tightly lidded glass jar. This Red Wine Sage Salt AKA magic dust is now ready to sprinkle its magic into your holiday feast.

Red Wine Sage Salt is a cheese board’s best friend, but it’s got range. Dust it over creamy brie, sprinkle it into a spinach dip, or give a holiday roast a sassy finish. Thinking outside the holiday box? Use it to rim a red wine cocktail glass. Toss it on roasted veggies. Also, you can sprinkle a bit on top of chocolate truffles for an unexpectedly luxurious kick. This also makes a lovely gift for your host or hostess.

I have a huge seemingly indestructible sage plant in my garden. It does not quit until late December. So sage was the obvious ingredient choice for this recipe. However, flavor combinations are only limited by your imagination and creativity.

Red Wine Sage Salt

Ingredients

  • 1.5 tablespoons dry red wine
  • 1 teaspoon finely chopped fresh sage
  • 1/4 cup coarse sea salt

Instructions

  1. Preheat the oven to 170F. Line a baking sheet with parchment paper
  2. Mix the red wine, sage, and salt.
  3. Spread it out and spread on the baking sheet. If the sage is clumping together, move it around with your fingers to distribute it evenly.
  4. Leave to dry in the oven for approx. 3 hours. Use a wooden spoon to prop the door open.
  5. Remove from oven and let cool overnight.
  6. Seal in a lidded jar and store in a cool, dry and dark place.
