Authentic Bavarian Potato Salad
Ingredients
- 4 lbs yellow potatoes
- 2 med-sized onions
- 1 cup vegetable broth
- 1 cup white wine vinegar
- 1 tablespoon sugar
- 1-1 1/2 teaspoons salt
- freshly ground black pepper
- 1/3 cup sunflower oil
- 1+1/2 cups thinly sliced gherkins
- 1 med-sized cucumber
- 1/4 cup fresh chives, finely chopped
Instructions

Boil potatoes in salted water for 20-25 minutes.

Drain & peel. Let the potatoes rest for about 10 minutes.
