Honestly, one has to be a bit nuts like me to make these Everything Shamrock Spinach Chips. Why would anyone spend time cutting shamrocks out of spinach leaves just to make something pretty and cute for St. Patrick’s Day? Consequently, someone should probably take away my cookie cutters.
Seriously, when I do this type of repetitive labor in a recipe, I work while watching TV or listening to a podcast. As a result, this makes the work go extremely quickly. Furthermore, it is very relaxing. With that being said I will not hunt you down and shame you if you decide to forgo the cutting out of shamrocks in this recipe. Probably no one you know would shame you either. Regardless, the winner here is the flavor.
For the seasoning, I had a few tablespoons of everything seasoning leftover in my pantry. I threw it into the Nutri bullet and ground it into a fine dust. Then, I sprinkled it over the oiled chips before baking. It is a genius move. I’ve included a recipe below for homemade everything seasoning. It is definitely a great way to use up some of the spices in your pantry that have been hanging out too long.
Additionally, I found some great tips for baking spinach chips from Divas Can Cook. Firstly, use a minuscule amount of olive oil to coat the spinach leaves before baking. Secondly, the chips can shrink when baked. Do not freak out. Just cut or chop them a bit bigger. Speaking of baking the chips are baked, not fried. So, a healthy bonus.
