So our first and hopefully our last socially distanced summer is flying by. What a weird, crazy, heartbreaking year we’ve had so far. So many of us take refuge in the kitchen when things get too intense. And things have been intense. I have missed large-scale entertaining, and throwing big parties in the summer. However, it has been lovely having only a few guests over at a time. Spending quality time with friends. Consequently, I’ve been able to leisurely create menus, finally tackling ideas and recipes I’ve been filing away. These Berry French Toast Rolls, spotted in a German food magazine, is a dish I have been waiting to make.

These are so easy to make. Also, it’s a great project to make with the little ones. Once the adult in the room cuts the crust off of the bread, the rest can be handled by the kiddies. That is until it’s time to cook.

To create these Berry French Toast Rollups, use a rolling pin to flatten white bread slices. Spread with cream cheese and sprinkle with cinnamon sugar. Arrange a line of berries down the middle. Then, roll up and pinch the seam to seal. Dip each roll in an egg and milk mixture.

Fry in butter in a skillet, gently turning to make sure each roll becomes golden all around. Transfer to a plate, sprinkle with more cinnamon sugar and serve with maple syrup.  I’ve seen a version from a German food blogger using Nutella. Definitely will try that next time.

This is such a fun dish for brunch. Additionally, using red and blue colored berries make it fun for a July 4th celebration. This version contains blackberries and raspberries. however, you can easily substitute blueberries and sliced strawberries. Alternately, mini wild strawberries would be adorable as well as tasty.

Ingredients

  • 16 slices white bread
  • 1/3 cup sugar
  • 1 tablespoon ground cinnamon
  • 1/2 cup cream cheese room temperature
  • 1.5 cups mixed berries
  • 2 eggs
  • 1/4 cup milk
  • 3 tablespoons unsalted butter

Instructions

  1. Cut the crust off of the bread slices.
  2. Use a rolling pin to flatten them out and cut each in half.

  3. In a second shallow dish whisk together the sugar and cinnamon
  4. Spread each bread slice with a layer of cream cheese.

  5. Sprinkle cinnamon sugar over the top.

  6. Arrange a line of berries on top, then roll the berries up into each slice forming a cylinder.

  7. Pinch the seams to seal each.
  8. In a shallow dish, whisk together the eggs and milk
  9. Heat the butter in a skillet over medium heat.
  10. Dredge the rolls in the egg mixture and place in the pan.

  11. Cook until golden brown.

  12. Transfer four rolls each to four plates, sprinkle with cinnamon sugar.
  13. Garnish with extra berries and serve with maple syrup
