Rhubarb Blood Orange Margarita

Ingredients

Rhubarb Syrup:

  • 1 cup water
  • 1 cup sugar
  • 1 cup rhubarb
  • 1 teaspoon lemon juice

Margarita:

  • Granulated sugar for the rim
  • 1/2 cup blood orange juice 2-3 oranges
  • 1/3 cup rhubarb syrup
  • 2 shots tequila
  • 2 cups Ice

Instructions

Make the Rhubarb Syrup:

  1. Place the sugar and water in a small saucepan. Bring to a boil.
  2. Add the fresh rhubarb pieces. Lower the heat.
  3. Cook for 15 minutes or until the rhubarb has completely softened.
  4. Strain the mixture through a cheesecloth back into the saucepan.
  5. Stir in the lemon juice and Let cool completely.

Make the Margarita:

  1. Dip the rims of two glasses into
  2. Juice the oranges.
  3. Blend 1/2 cup of the rhubarb syrup, the blood orange juice, tequila, and 2 cups of ice until slushy.
  4. Pour into 2 glasses and serve.
