I was actually in my 20’s before I had my first taste of Matzoh Brei. For a Jewish (albeit nonpracticing) girl from Long Island, this is a shanda. However, once you taste this ultimate Jewish comfort food, you never go back. homemade chicken noodle soup is probably the first on that comfort food list. Matzoh Brei has to be second, or at least in the top five. This Everything Matzoh Brei should put it up on the list.
Jump to RecipeThe ont thing about making this dish that always had me experimenting was seasoning. Kosher salt and freshly ground pepper are a must in my book. However, I like to experiment with different combinations of spices. Usually just randomly sprinkling them on the finished dish. This Everything Matzoh Brei recipe solves that whole spice balancing issue. Adding the everything mix completely transformed this dish.
This Everything Matzoh Brei could not be simpler to throw together. Many people like to start off the recipe by soaking the matzoh in water. I like to break it into little pieces and then spritz it with hot water from a spray bottle. Consequently, I’m able to control the sogginess factor way better.
Whisk the eggs together with the everything seasoning. Dredge the softened matzoh in the mixture and fry it up in a combination of butter and vegetable oil. In 15 minutes this Everything Matzoh Brei will be on your plate, ready to be enjoyed.
I sprinkled a bit of extra Everything seasoning over the top before eating. The result is forkfuls of seasoned crispy comfort. A perfect plate for holiday breakfast, brunch or staying home sick.
Everything Matzoh Brei
Ingredients
- 4 sheets of unsalted matzoh
- hot water
- 4 eggs
- 2 tablespoons everything seasoning, jarred or see recipe below. Plus some for sprinkling
- 2 tablespoons unsalted butter
- 2 tablespoons vegetable oil
- Fresh Parsley for garnish.
Instructions

Break the matzoh into little pieces and place in a bowl

Fill a spray bottle with hot water.

Spritz the matzoh tossing as you go to make sure it’s covered evenly and softened.

In a separate bowl, beat the eggs and Everything seasoning together.

Use a paper towel to pat any excess water off of the matzoh.

Add the damp matzoh to the egg mixture. Toss to coat completely.

Heat the butter and oil in a skillet.

Add the matzo mixture to the pan.

Cook on one side, then the other. Break up the matzoh brie with a spatula and cook until crisp.

Plate, sprinkle with extra Everything seasoning, if desired, garnish with parsley sprigs and serve immediately.
Everything Seasoning:

6 tablespoons Poppy Seeds

6 tablespoons Sesame seeds white or black or a mix of both

3 tablespoons caraway seeds

6 tablespoons garlic flakes

6 tablespoons onion flakes

1+1/2 tablespoons large grain salt
Mix the Everything Seasoning:

Place all the seasonings except the salt together in a jar. Seal and give the jar a few shakes.
